CLASSES
This class includes instruction on tnutritious sourdough breadshe care and use ;of and shaping
your Boules and Bâtardsa wild ; on perfect slashing of mixing your loaves; a great Sourdough
Bread Recipe, Ciabatta, Pizza Dough and Sauce Recipes; bread tasting; invaluable techniques
and tips and a loaf of freshly baked Sourdough Bread right out of the outdoor Brick Oven to take
home and enjoy! A fun and informative Class! This class is limited to 6 students.
This 4-Hour Class includes instruction on making a fantastic pizza dough, hands-on kneading and
shaping of your doughs, instruction on ingredient preparation, tips on great pizza topping
combinations, classic Italian combinations, firing of the brick-oven, cleaning the hearth and baking
the pizza. This class is limited to 10 students.
This 6 hour class includes instruction on the basics of all-grain brewing from measuring out the
grain, milling it, heating up the hot liquor tank, preparing the grain bed for a step infusion mash,
setting up the controller for temperature monitoring and pump operation, infusion mashing,
sparging, the boil with hops additions, cooling down the wort, pitching the yeast, proper aeration,
and building a starter. This class is limited to 10 students.
Classes are a fun and informative way to learn a new skill, experience team building or just spend some time
on the grounds at the Pecan Wood Bakery. All classes are scheduled based on current requests and take
place at the Pecan Wood Bakery. Contact Lee at least 2 weeks in advance to arrange for a class that
interests you. No previous experience is necessary.
